So, as many of you know, I am on a low FODMAP, AIP diet to heal and manage the symptoms of my hashimotos thyroiditis and SIBO. This elimination diet isn't meant to last forever, but while it does, I might as well come up with some tasty treats to go with all of my protein and veggies! :-) | Therefore, I wanted to share a few recipes with you that meet that criteria. I will slowly be posting more as I experiement. I will also post a grain free/gluten free dog treat, that my puppy loves! Enjoy! |
Banana Bread (AIP) Ingredients
| Whipped Tigernut Butter! This is a good alternative for those with various nut and food allergies/sensitivities and those following an autoimmune paleo (AIP) diet. 😊 Whipped Tigernut Butter 120g tigernut flour 48g palm shortening 37g coconut oil 10g maple syrup 20g coconut milk Salt, vanilla, and stevia to taste Blend in a food processor and enjoy! |
Grain-Free Peanut Butter and Banana Dog Cakes
1 Preheat your oven to 350 degrees Fahrenheit .
2 Line a muffin pan with paper muffin cups.
3 In a large bowl mix the peanut butter, eggs, bananas, cottage cheese and honey. Mix in the coconut flour and baking soda. Mix well.
4 Use two spoons to drop dollops of dough into the muffin cups and fill the cups 3/4 of the way.
5 Bake for 20-25 minutes.
6 Let your dogs lick the spoons clean. (Very important step!)
7 In a small bowl cream together the cream cheese, oil and peanut butter.
8 Place in the fridge for 10 minutes.
9 Let the muffins cool then ice the pupcakes and place freeze dried liver treats on top.
10 Serve, and enjoy the delight on their faces as they chow down!
